Cannabis Infused Flourless Chocolate Chip Cookies: Easy Recipes for Cooking with Cannabis at Home

This Flourless Chocolate Chip Cookie Recipe is one of our super easy recipes for cooking with cannabis. I love this recipe because despite its dessert status, it brings some serious nutrients to the table, due to the use of protein-rich chickpeas, natural nut butter and antioxidant-rich dark chocolate. The infusion of THC (or CBD) comes from the use of CannaHoney (Cannabis Infused Honey) in the batter.

You can make this recipe very quickly all in 1 day, but we strongly recommend allowing the dough to rest in the refrigerator overnight before adding the chips and baking. The resting period improves the taste of the finished product, giving the flavors time to meld and ripen before baking.
Ingredients: Makes 15 cookies
- 1 14 oz can organic chickpeas, rinsed and drained
- 1 cup smooth natural nut butter
- 1/2 cup (4 oz) Cannabis Infused Honey https://www.getbakedediblesshop.com/product-page/hemp-infused-honey-jar-1-oz
- 1/4 cup brown sugar (optional)
- 1 1/2 teaspoons baking soda
- 2 tsp vanilla extract
- Cooking Spray
- 1 cup dark chocolate chips
Equipment:
- Food Processor
- Measuring Cup and Spoons
- 1 baking sheet
- Parchment Paper or Silpat
- 1 mixing bowl
- 1 large cooking spoon or spatula
- Cookie dough scoop
- Wire cooling rack
Instructions: Day 1
1/ Pulse all ingredients except the chocolate chips in the food processor until a smooth, thick batter is formed (see photo below)
2/ Refrigerate overnight (optional)

Instructions: Day 2
1/ 1 hour before baking, take the batter out of the refrigerator, allow to warm to room temperature. When warmed, transfer to mixing bowl.
2/ Preheat oven to 350 degrees
3/ Cover the bottom of the baking sheet with Silpat or parchment paper
4/ Add the chocolate chips to the batter. Use spoon to stir until chips are distributed throughout the batter

5/ Use the cookie dough scoop to drop dough balls onto the cookie sheet. Leave at least 1" between cookies to allow room for spreading.

6/ Bake for 14-15 minutes, until the edges are light golden brown.
7/ Remove from oven, allow to rest for 10 minutes before transferring to a wire rack to fully cool. These cookies are soft, so best to move them with a spatula.
