This is one of my favorite easy recipes for cooking with cannabis.. I include it (not infused) at my Easter and Christmas dinners pretty much every year. It only takes about 20 minutes to prepare, and can be made in advance. I make it 1-2 days before Christmas/Easter dinners and reheat it for the meal. In addition to being yummy, it the dish adds a nice pop of color to the table.
INGREDIENTS: approx 8 servings
- 2 lbs carrots, peeled and cut into 1/2" rounds
- 2 tablespoons salted butter
- 2 oz cannabis infused honey (Try our Get Baked Edibles Infused Honey- link below!)
- 1 tablespoon salt (for cooking water)

- 1 2 quart saucepan
- 1 medium saute pan
- 1 colander or large strainer
- Spatula or cooking spoon
1/ In a saucepan, add the 1 tablespoon of salt to 2 cups water. Heat to a boil over medium heat
2/ Once boiling, add the cut carrots. Boil for 6 minutes, then remove from heat
3/ Pour carrots into a strainer; discard cooking water. Set carrots aside while heating saute pan
4/ Add the salted butter to saute pan. Melt over medium low heat.
5/ Once the butter has melted, add the carrots. Toss the carrots in the butter until carrots are softened, but still firm (about 5 minutes).
6/ Once desired softness is achieved, add the infused honey. Toss the mixture until honey is heated through and carrots are glazed (2 - 3 minutes).
7/ Remove from heat, add additional salt to taste.
