Cannabis Infused Low Carb Plum Cake: Easy Recipes for Cooking with Cannabis

This Low Carb Plum Cake is one of our super easy recipes for cooking with cannabis. I make this recipe once a year (in August when plums are at their peak). We look forward to it all year!


The infusion of THC (or CBD) comes from the use of CannaButter (Cannabis Infused Butter) in the batter.


We use our own Get Baked Edibles CannaButter for this recipe. If using our CannaButter as instructed, the each serving will deliver 30 mg of THC, enough to deliver most experienced users a nice high!

If you want less THC content, lower the cannabutter amount and replace with plain butter.


Ingredients: Makes 8 servings

- 1 lb ripe plums, each sliced into 6 wedges

- Grease for pan (I use Pam cooking spray)

- 1 cup almond flour

- 1/2 cup keto flour

- 1 1/2 tsp baking powder

- 1 tsp cinnamon

- 1/4 tsp ground nutmeg

- 1/8 tsp cardamom

- 1/2 tsp salt

- 2 tablespoons room temperature unsalted butter

- 1/2 cup + 2 tablespoons granulated Splenda, divided

- 1/2 cup allulose

- 1 large egg

- 1/2 cup milk (Nut or Soy milk will work)

- 1 tsp vanilla extract

Equipment:

- 9" springform pan

- Whisk

- Measuring cup and spoons

- 2 mixing bowls

- kitchen knife and cutting board

- hand or stand mixer

- spatula


Instructions:

1/ Preheat oven to 350 degrees. Assemble and grease springform pan.

2/ Use whisk to combine the flours, spices, baking powder and salt in a mixing bowl. Set aside.

3/ Add butters, 1/2 cup allulose, and 1/2 cup Splenda to mixing bowl. Use mixer to cream for 5 minutes.

4/ After the butter is creamed, add the egg, milk and vanilla extract. Use mixer to combine thoroughly (about 1 minute).

5/ Add 1/2 of the dry ingredient blend to the butter mixture. Use mixer to incorporate fully. Repeat with 2nd half.

7/ Spread into springform pan.

8/ Apply plum slices atop cake batter in a circular pattern. Top with remaining 2 tablespoons of granulated Splenda.

9/ Bake in middle rack of the oven for 40 minutes, or until a fork comes out clean. Allow to cool completely in pan before removing the springform collar.
